we stayed at excelsior after we got married. it was good, but in all honesty, we checked in at 11pm and had to check-out by 11am (or was it 12noon?)
i would suggest penninsula or mandarin oriental

Mandarin Oriental Hotel is fabulous for the authenic oriental experience / service. They provide amazing spa treatments as well.
I must admit the views from the Penninsula are magnificent.... great service too!

took my bf to langham place in mongkok for the spa+room package, it was really cool! room came with a jacuzzi and there was also an outdoor heated pool at the rooftop.
it's a nice experience for overseas visitors and it was not very expensive (compare to grand hyatt and mandarin). but of course, it's in mongkok, dunno maybe if you'd want to keep them on the HK side.

I've lived in HK a long time and tried most of the hotels here. Top ones in terms of views, space, luxury and feeling special would be Peninsula or Four Seasons. Four Seasons has gorgeous outdoor horizon pool perfect for honeymooners, Peninsula has colonial feel throughout and outdoor decking views next to its roman style indoor pool. If they're too pricey I'd try Grand Hyatt Wanchai.

If you can afford Four Seasons is the best among all or Holiday Inn is a cheaper option.
