Lunch ideas
Posted by Kaat (876 days ago)
Hi, I'm trying to save a bit of dosh as well as eating healthily at the same time by bringing my own lunch to work. But I'm so clueless about what to make - the only thing that comes to mind is a cold cut sandwich, which I don't want to have everyday!!
Would anybody have simple ideas/recipes for lunch? Thanks! =)

I prepare lunch for my husband who forgets to leave his desk to eat. He is training for action-asia type of activities so he prefers low-fat, high protein, moderate carbs. His staples include:
Mix and match the following--
- pasta noodles (drizzled with a bit of olive oil, some pepper and teeny tiny bit of salt)
- grilled chicken breast
- tuna (from a tin)
- steamed veggies-- corn, green peas, carrots
- boiled potatoes, mashed potatoes
- hard-boiled eggs (he doesn't eat the yolks..)
- stir-fried tofu with veggies
- salads: nicoise, chicken potato (no mayo)
- steamed chicken + some bottled hainanese sauce
- make your own fajitas-- tortilla, grilled chicken/beef, peppers, mushrooms, some cheese
- some fruits, mostly bananas. sometimes I put in a box or 2 of raisins and a pouch of roast almonds
I know they seem bland and tasteless to some, but my husband gained weight from too much cold cuts + cheese sandwiches in the past months. And now, he's not the only one benefitting from healthier choices..

Annebin-Any chance you want to make me lunch too?
A homemade mix of chick peas, cannellini beans, red onions, tuna, and plain yogurt is nice. YOu can also add a little pasta of your choice.
Sweet potato couscous is really nice too.
Bon appetit!

Sorry sport, until I start a business of this sort, you would just have to content yourself with reading posts here, or making your own.. :)
